I removed the ClamWin and for my surprise the system goes firing dozens of emails per hour, as in the example below:

The ClamAV Anti-Virus has found viruses:
'"clamscan.exe"' is not recognized as an internal or external command,
operable program or batch file.
in the e-mail coming from "postmaster@xxxx.yyyy.com.br" to the following recipients "macedoim@hotmail.com". The message was deleted.

How can this be happening even after the removal of the software?

looks like you still have clamtray and the scheduler still enabled
go in program files and remove clamwin dir (you may need to kill clamtray if in execution)
