Preferably the next early morning... right now I have it scheduled at like 3am Sunday, but sometimes when I log in to my computer, the update notification pops up... and I'd just like it to automatically schedule a scan for the next morning.
Also if there's some kind of round-about way to do it, let me know.

It looks to me that the Clam AV code was changed some time ago to trigger an update shortly after you log on to the computer--even if you do not have the update virus database upon log on ClamWin option ticked. This has been my experience for a couple of years now.
You might see if you could set up a Windows task schedule to scan at the time you want, but I think an update will still occur some minutes after you log on.
