I got a notification after my scheduled scan that a virus was found, when I click the bubble (bottom right of Windows 7) I get the option to Display Reports and Virus Scan Results, when it opens, I see the results at the bottom, but when I scroll up or copy/paste to a text editor (for searching), the top text is truncated. This is kind of useless and requires me to open ClamWin, go to Preferences, then Reports, then open the scan report browse button and right-click open the log file.

Is there no way the report window can show ALL of the text of the scan, or at least a button to open the log file?

I'm sure there is a way, but ClamWin most likely is just using the format from Clam AV. You might want to make a suggestion to the developers via the Contact menu item on the main ClamWin web page.

I'm developing a new UI for ClamWin that will have a totally different log results view (it will allow text and CSV export, though).

You may use CMTrace from Microsoft to analyze ClamWin log by now. It allows you to highlight the log results matching the info you're looking for without much effort.
